Every Friday beginning July 10, join us from 4–7 PM for Summer Fridays at Winderlea.

Gather with friends, family, industry, Wine Society members, and fellow wine lovers to soak up the sunshine on the balcony and in the wine garden. Enjoy Winderlea wines by the glass or bottle, linger a little longer, and discover a rotating lineup of celebrated chefs and culinary friends all summer long.

Friday, July 10, Featuring Chef Sam Saltos

Because sushi and Oregon wine? They might just be the perfect match.

We’re thrilled to welcome celebrated Portland sushi chef Sam Saltos, chef and founder of Hiyaku, one of Portland’s most sought-after underground omakase experiences.  

Throughout the evening, Sam will prepare fresh, made-to-order handrolls for guests to order and enjoy alongside their favorite Winderlea wines.

A graduate of the Culinary Institute of America, Sam has cooked in some of the world’s most respected kitchens, including Morimoto NYC, Noma in Copenhagen, Acadia in Chicago, Zilla Sake in Portland, and Sushi Noz in New York City. Through Hiyaku, Sam showcases the extraordinary ingredients of Japan and the Pacific Northwest, sourcing local fish and produce to create a dining experience that is both deeply rooted and unexpectedly transportive.

For our inaugural Summer Friday, we’re bringing a taste of Hiyaku to Winderlea.
